I'm also working on a 360' video rig, with the idea to create a bullet-time dance cage. There's a ring of usb cameras (320x240) feeding into one computer which will be connected to a projector. One camera is displayed at a time, and the view switches from camera to camera (potentially with some blending), so it looks like you're rotating around the subject in the center.
Currently I have 29 cameras working simultaneously, but hope to get up to 32 or more (hardware should support up to 40). If time permits I would also like to add some motion effects and the ability to record to video. The software is written in python and Gtk using the Gstreamer media framework, and my poor understanding of Gtk and Gstreamer is the current major limiting factor.
Here's what I will definitely be able to bring with me:
PC, with screen and keyboard, running Kubuntu 8.04
40+ usb cameras
8 usb hubs (can handle 5 cameras each)
8 usb extension cables (16 feet each)
32 camera stands (5.5 feet tall, weighted bottoms, formerly floor lamps)
24+ mini-clamps for mounting of things and misc. clamping
large folding table
